Stuffed avocado’s with Lazy Vegan Mexican

You don’t need more than 12 minutes to prepare this Mexican fiesta!

  • 4 avocado’s
  • 1 red onion
  • 8 sprigs of Parsley (or Coriander)
  • lemon juice
  • oat fraiche (or red salsa dip)
  • 1 bag of tortilla chips
  • 2 bags of Lazy Vegan Mexican

The perfect dish for a Lazy Vegan fiesta! it doesn’t have to be complicated to prepare something nice for your friends:

Dice the red onion and parsley (or coriander). Stir fry the Lazy Vegan Mexican meals. Slice the avocado’s into halves and remove the seeds. Squeeze or rub a little lemon juice on the flesh to keep browning at bay. Fill the avocado halves with the Lazy Vegan Mexican and top with the red onion and parsley (or coriander). Serve with tortilla chips and some oat fraiche or red salsa dip!
