Roasted Sweet Potato With Chicken Style Pieces

Delicious roasted sweet potato with Chicken Style Pieces!

  • 4 sweet potatoes
  • 4 garlic cloves, roasted (add to oven after 20 min)
  • cherry tomatoes , roasted (add to oven after 20 min)
  • 200 g green lentils, cooked
  • 1 small can of corn (150 g)
  • vegan coconut yoghurt 2 tablespoons
  • tahin 2 tablespoons
  • lemon juice
  • handful of parsley
  • 280 grams of Lazy Vegan Chicken Style Pieces

Preheat oven to 425º. On a baking sheet, prick your sweet potatoes all over with a fork. Cut the cherry tomatoes and put them next to the potato on the baking sheet. Bake until tender for 45 minutes. In the meantime stir-fry your Chicken Style Pieces. After 45 minutes split the tops of the potatoes open with a knife and add the Chicken Style Pieces, lentils, corn, cherry tomatoes and top it off with the grated cheese. Put it back in the oven for 5 more minutes.
