- 1 bag of Lazy Vegan Mexican
- 4 Wholemeal tortilla wraps
- 150 g Coconut yoghurt
- Flour
- Water
- Tomato paste
- 2 tbsp lemon juice
- Chives

Preheat the oven to 180°C. Add some oil to a frying pan and stir-fry the Lazy Vegan Mexican meal for 7 minutes. Add a little bit of tomato paste and stir-fry for one more minute. In the meantime make a paste of flour and water until a thick mixture has been reached. The flour-watermixture will be your glue to seal the hot pockets.
Cut the tortilla wraps into 4 pieces. Put a little bit of the Lazy Vegan Mexican meal on a piece of tortilla and close the tortilla by folding it. Seal the tortilla by putting a little bit of the flour-watermixture on the edges. Glue the edges together. Repeat this process until all the pieces of tortilla are filled and folded. Put the pockets on a parchment-covered baking sheet and bake the for about 5 minutes.
In the meantime, add the coconut yoghurt, chives and lemon juice to the bowl of a food processor and mix all the ingredients. Put the coconut yoghurt sauce in a bowl.
Serve the hot pockets with the coconut yoghurt sauce and you’re ready to enjoy these spicy bites!
