Courgetti with avocado pesto and tomatoes

It only takes you about 8 minutes to make a tasty healthy courgetti!

  • 2 zucchinis
  • 2 avocado
  • 1 lemon
  • 2 garlic clove
  • 60 gram pinenuts
  • 100 gram basil
  • 10 cherry tomatoes

Wash the zucchinis, cut off the ends. Use a spiralizer to make the courgetti. Put the basil, pine nuts, avocado, garlic cloves and a little lemon juice in a blender and mix it. Heat the courgetti for 2 or 3 minutes in a pan. Mix the courgetti and the avocado pesto. Top it off with a few cherry tomatoes. Add some vegan parmezan cheese for a delicious topping!
