Broccoli rice salad with grilled peaches and almonds

Perfect day for a tasty salad!

  • 800 gram peaches (fresh ripe peaches or canned peaches)
  • 4 large stalks of broccoli
  • 2 cloves of garlic
  • 2 tbsp miso paste diluted with 100 ml of boiled water
  • 4 tbsp of soy sauce
  • 2 small red onions
  • 2 tsp of chilli flakes
  • 200 gram almonds

Cut the broccoli into florets. Put the broccoli into a food processor and pulse until small rice-sized pieces are formed. Chop the red onion. Heat some oil in a pan and sauté the chopped onion. Chop the garlic and add to the onion. Add the broccoli, miso, soy sauce and chilli flakes. Stir-fry for 3 minutes. You want to keep the crispiness of your broccoli rice. Pat the peaches (if they are canned) dry. Cut the peaches into halves and grill them for a few minutes on a grill pan.  Put the stir-fried broccoli in a bowl and top with the grilled peaches and almonds. Enjoy!
