Zucchini with Lazy Vegan Provencale

A really easy Provencale dish!

  • 4 zuchhini’s
  • 4 tbsp olive oil
  • pine nuts, roasted
  • 3 bags of Lazy Vegan Provencale

Preheat the oven to 180 C. Cut the zucchini’s in half lengthwise and use a spoon to scoop out the seeds. Grease a baking tray with olive oil. Also brush the zucchini halves with some olive oil. Put the zucchini halves in a baking tray and sprinkle some pepper and salt. Roast the zucchuni halves for 20 minutes in the oven. In the meantime (the last 10 minutes), preheat some olive oil in a pan and stir-fry the Lazy Vegan Provencale meals for around 10 minutes. Fill the zucchini halves with the Lazy Vegan Provencale. Top with some roasted pine nuts. Ready to serve!
