Pasta salad with lemon-garlic dressing

A perfect addition to your summer day: a light & healthy pasta salad!

  • 500 gram pasta
  • 500 gram cherry tomatoes chopped
  • 1 yellow bell pepper
  • 50 gram rucola
  • 50 gram pine nuts
  • 180 gram sun-dried tomatoes
  • 1/2 lemon
  • 100 ml olive oil
  • 1 clove of garlic, squeezed
  • 3 tbsp soy yoghurt (or another kind of plant based yogurt)
  • 280 gram of Chicken Style Pieces

Cook the pasta as described on the package. Stir-fry the Chunky Pulled Peaz for 5 minutes in a frying pan. Roast the pine nuts in a frying pan (without olive oil). Slice the cherry tomatoes into halves and cut the bell pepper.

Put the olive oil, soy yogurt, garlic and some pepper and salt in a small bowl. Add a bit of freshly squeezed lemon juice. Mix the ingredients to a nice dressing.

Put the cooked pasta, Chicken Style Pieces, cherry tomatoes, sun-dried tomatoes, bell pepper and rucola in a large bowl. Mix the ingredients with some dressing and the roasted pine nuts. Serve and enjoy!
