Greek Orzo with Feta, Tzatziki & Chicken Style Pieces

  • 400 grams orzo
  • 2 grilled red peppers
  • 150 gram vegan feta
  • 1 large onion, diced
  • 2 cloves garlic, finely chopped
  • 400 gram diced tomatoes (canned)
  • 1 bay leaf
  • 2 tsp dried oregano
  • 1 tsp cayenne pepper
  • 4 tbsp vegan mayonnaise
  • 4 tbsp plantbased yoghurt
  • 100 gram cucumber
  • 280 grams of Chicken Style Pieces

Put a large pan of salted water on to boil. Cook the orzo according to the package. Heat a large frying pan with some olive oil on medium heat and then add the onion. Allow to cook until it’s browned. Add then half of the garlic and cook for 2 more minutes. Add the Chicken Style Pieces and cook until they are nicely fried. Add the grilled peppers and add after one minute also the diced tomatoes, bay leaf, oregano, cayenne pepper en some pepper and salt. Heat the sauce for a few minutes and add the cooked orzo to the pan.

For the tzatziki:

Put the other half of the garlic, the mayonnaise, the yoghurt and some pepper and salt in a bowl. Cut the cucumber into small pieces and add to the bowl. Mix all the ingredients.

Cut the vegan feta into small pieces. Place some orzo and tzatziki on a plate and top it of with some feta. Ready to serve!
