Surinamese Roti with Chicken Style Pieces

A delicious traditional Surinamese recipe but vegan! If we can prepare it, so can you! Make your own roti pancakes or get it from your favorite Surinamese take-away (they’re already vegan). Nyan Switi or Enjoy!

Ingredients

  • 500 g potatoes
  • 500 g green beans
  • 3 small tomatoes, chopped
  • 5 tbsp massala herbs
  • 1 vegetable stock cube
  • 2 cloves of garlic
  • 1 large onion, chopped
  • 4 roti pancakes
  • olive oil
  • 280 gram Chicken Style Pieces (1 bag)

Peel the potatoes and cut them into large pieces. Boil the potatoes for around 15 minutes and rinse with cold water. String the green beans and cut them into halves. Boil the green beans for around 6-8 minutes.

Heat some olive oil in a pan and stir-fry the Chicken Style Pieces for 2 minutes om medium heat. Then add the chopped onion, one squeezed clove of garlic, the vegetable stock cube (crumbled) and the chopped red chilli pepper. Stir-fry for another 2 minutes. Now add 3 tbsp of the Masala herbs and the chopped tomatoes. Mix this with the rest of the ingredients in the pan. Add a cup of water and let this reduce on low heat.

Heat in another pan some olive oil and stir-fry the green beans for 3 minutes. Then add the other clove of garlic (squeezed) and stir-fry for 2 more minutes.

Heat in another pan some olive oil and fry the potatoes for 4 minutes. Then add two tbsp of the Massala herbs, some salt and 1/2 cup of water so there will be created a vegan gravy. Heat for 3 more minutes on medium heat.

Now it’s time to fill your plate with these delicious ingredients: put a warm roti pancake, some potatoes, green beans and chicken curry on your plate and you’re ready to enjoy your home made Surinamese roti!
