- 1 red onion
- 4 tomatoes
- 10 cherry tomatoes
- 1 red paprika
- 1 full garlic
- 200 gram vegetable stock
- 100 ml coconut milk
- fresh thyme
- fresh oregano
- roasted bread
- pinch of salt
- 280 gram Chicken Style Pieces (1 bag)
Delicious vegan roasted tomato soup for any occasion! Easy to make, plant-based, gluten-free, and beautiful to look at! Enjoy and let us know if you try it out.
Cut the entire garlic with skin and all in half, do the same with the red onion. Add garlic, onion, tomatoes, cherry tomatoes, paprika, some fresh thyme & oregano on an oven tray.
Add 2 tablespoons of olive oil and mix all. put in over for 30 min on 180 C.
Add all roasted vegetables to the mixer, add all cooked garlic cloves and onions too. Do not add roasted spices.
Add vegetable stock & coconut milk. Mix until smooth.
Fry chicken style pieces, then add to soup in a pan.
Serve soup and garnish with extra Chicken Style Pieces, fresh thyme & roasted bread on the side.
