  • 2 avocado's
  • 1 red onion
  • 1 tomato
  • 1/2 lime
  • pepper and salt
  • coriander
  • cress
  • pomegranate seeds
  • plant based Greek yoghurt

A delicious Mexican meal full of fresh vegetables, while you are actually a bit lazy? It’s possible!

Below you can see how you can prepare a delicious Mexican meal for yourself in 10 minutes:

Toss the Lazy Vegan Mexican meal in a frying pan with a little oil. Stir it every now and then.

In the meantime, cut the avocados, red onion and tomato. Mix these ingredients into a smooth guacamole. Drizzle the guacamole with the juice of half a lime. Finally, add some salt and pepper to taste and stir well one more time. Don’t forget to stir the pan from time to time!

Divide the Lazy Vegan Mexican over 2 burrito wraps. Garnish with some coriander, watercress, pomegranate seeds and a dash of Greek yogurt.
