Thai Green Curry with Thai Mango Salad & Peanuts

Hey Lazy Chef! Relish the taste of India with our Tikka Masala with naan bread and a refreshing plantbased yoghurt dip (Raita). Easy & yummy!

Ingredients

  • 1 bag of Lazy Vegan Tikka Masala
  • 4 tbsp Vegan yoghurt
  • 1/2 tsp cumin
  • 1/5 cucumber
  • 4 fresh mint leaves
  • Juice of 1 lime wedge
  • Black pepper
  • Naan bread
  • Pomegranate seeds

1. Heat some oil in a frying pan and heat the frozen Tikka Masala meal on medium heat for 8-10 minutes. Stir occassionaly.
2. In the meantime prepare the vegan yoghurt dip: dice the cucumber and cut the mint into smaller pieces. Mix with vegan yoghurt, cumin, lime juice & black pepper in a small bowl.
3. Put the heated Tikka Masala in a bowl and put some yoghurt dip on top. Finish with some pomegranate seeds. (Optional to add an extra lime wedge).
