Roasted Sweet Potato With Chunky Pulled Peaz Mediterranean

Delicious sweet ovenbaked potato with Chunky Pulled Peaz!

Ingredients

  • 4 sweet potatoes
  • 4 garlic cloves, roasted (add to oven after 20 min)
  • cherry tomatoes , roasted (add to oven after 20 min)
  • 200 g green lentils, cooked
  • 1 small can of corn (150 g)
  • vegan coconut yoghurt 2 tablespoons
  • tahin 2 tablespoons
  • lemon juice
  • handful of parsley
  • 280 grams of Chunky Pulled Peaz Mediterranean

Preheat oven to 425º. On a baking sheet, prick your sweet potatoes all over with a fork. Cut the cherry tomatoes and put them next to the potato on the baking sheet. Bake until tender for 45 minutes. In the meantime fry your Chunky Pulled Peaz. After 45 minutes split the tops of the potatoes open with a knife and add the CPP, lentils, corn, cherry tomatoes and top it of with the grated cheese. Put it back in the oven for 5 more minutes.
