Ovenbaked Potato With Chunky Pulled Peaz and black beans

Delicious ovenbaked potato with Chunky Pulled Peaz and some black beans!

  • 4 potatoes
  • spring onion, chopped
  • 200 gram black beans
  • 1 small can of corn (150 g)
  • 1 clove of garlic, chopped
  • vegan coconut yoghurt 2 tablespoons
  • tahin 2 tablespoons
  • handful of parsley
  • 280 grams of Chunky Pulled Peaz Mediterranean

Preheat oven to 425º. On a baking sheet, prick your sweet potatoes all over with a fork. Bake until tender for 45 minutes. In the meantime fry your Chunky Pulled Peaz. Make a topping using vegan yoghurt, garlic, tahin and some olive oil. After 45 minutes split the tops of the potatoes open with a knife and add the Chunky Pulled Peaz, black beans, corn and spring onions. Top it off with your garlic sauce. Enjoy!
