Banana chip nachos with Chunky Pulled Peaz

Ingredients

  • 2 tomatoes, diced
  • 1 red onion, chopped
  • 1 red bell pepper
  • 1 small can of corn
  • 1 small can of kidney beans
  • 3 cloves of garlic, chopped
  • 1 chili pepper, chopped
  • 3 tsp cumin
  • 1 tsp chili powder
  • 2 tsp paprika powder
  • 1 bag of banana chips
  • vegan grated cheese
  • 280 gram Chunky Pulled Peaz Mediterranean

Preheat the oven at 180 degrees. Rinse the beans and corn. Add some oil to a frying pan and fry the onion and garlic. Add the Chunky Pulled Peaz and all the herbs. After a few minutes add the bell pepper, stir occasionally. Then add the beans, corn and tomatoes. If it’s really dry, add a little bit of water. Simmer for 10 minutes.
Spread half of the banana chips in an oven dish. Add some vegan grated cheese and the stew. Add with another layer of chips and some grated cheese. Put the dish in the oven for about 10 – 15 minutes. You can serve this with salsa, guacamole or chilisaus.
