Autumn pumpkin curry with Chunky Pulled Peaz

A delicious autumn curry to make you nice and warm!

  • 400 gram chickpeas
  • 1 pumpkin, chopped
  • 1 zucchini
  • cherry tomatoes
  • coriander
  • 2 cloves of garlic finely chopped
  • 3 tsp yellow curry
  • 2 cans of coconutmilk
  • 1 tsp soy sauce
  • handfull of cashew nuts, finely chopped
  • 300 gram rice
  • 280 gram Chunky Pulled Peaz Mediterranean

Cook the rice. Prepare the curry sauce by mixing the currypaste, soy sauce and coconutmilk in a big fryingpan. Add the vegetables, stir for about 15 minutes. Use another pan to fry the Chunky Pulled Peaz together with some garlic. Add the Chunky Pulled Peaz and the chickpeas to the curry. Stir for a few minutes. Top it of with chopped coriander and cashew nuts.  Serve with rice.
